17th of May coconut and vanilla pie

Half of my family's from Norway, so it just felt right to continue in the same 17-May theme today. Sometimes it is actually the simplest best. A pie crust made ​​with coconut, egg whites and sugar, filled with vanilla cream and garnished with berries and small meringues .... obviously with Norwegian flag motif ..... Pie crust:
400grams coconut
6 egg whites
3 cups sugar
Here's how: Put all ingredients in a bowl and mix with a spatula. Line a baking tray with baking paper and press out the coconut paste. Make a small ridge around that will keep the custard in place, and bake for about 45 minutes at 150 degrees C, until you get a nice golden color.
Vanilla Cream:
1 liter of milk
2 teaspoons vanilla extract
8 yolks
1.5 cups cornstarch
2 cups sugar
Here's how: Heat the milk and vanilla extract in a saucepan, on medium heat. In a separate bowl, blend cornstarch, sugar and egg yolk. Pour the hot milk and stir together. Pour the cream back in the saucepan on the stove, but for only a few minutes, stirring constantly.
Fill pie crust with vanilla cream and garnish with fruit. I even had small meringues in order to get to the white part of the Norwegian flag. Good Luck!
