Anna's coffee and whiskey cake

Our neighbor Anna's birthday was also this weekend ... and for her, I decided to bake a cake of meringue and peanut base, filled with caramel and cream cheese flavored with whiskey and coffee. Hope you had a nice day yesterday, Anna! Congrats to you!

Layer 1 / base:
100 grams of peanuts,
1 cup powdered sugar (60 grams),
3 egg whites,
0.6 cup sugar (50 g)
Layer 2 / caramel:

1.2 cup sugar (100gr)
2 cups whipping cream,
100 grams of white chocolate,
40 grams of butter,
70 grams of salted peanuts

Layer 3 / curd:
300 grams of milk chocolate,
100 grams of butter,
0.5 cups of coffee,
0.5 cups of whiskey,
3 eggs,
4 sheets gelatin,
1.2 cup sugar (100gr)
1 package cream cheese 200 grams.

Here's how: Base: Preheat the oven to 170 degrees C. Line a round shaped baking form (with removable edge) with parchment paper. You need to have the paper a little further up over the edge of the form because it's pretty much filling for this cake. Run the nuts and icing sugar in a blender. Beat egg whites and sugar until meringue, stir in the nuts-mixture, mix well and spread as a base into the baking form. Bake in center of oven for 25 minutes. Let it cool.
Caramel: Melt the sugar in an iron pan. Pour in the cream and bring to boil, stiring until you get a tough, smooth fine caramel. (When you pour in the cream, the sugar will solidify as a crust, but keep stiring and it will melt). Remove from the heat and add the white chocolate. Stir until it has melted and add the butter. Let the caramel cool slightly before pouring it over the bottom. Sprinkle with peanuts.
Curd: Chop the chocolate and melt it togetherwith the butter. Soak the gelatin in water for about 5 minutes. Squeeze the water out of the gelatin after 5 minutes and melt it in hot coffee. Stir in the whiskey. Stir into chocolate mixture: egg yolks, cheese and coffee mixture. Beat egg whites and sugar until meringue and stir it gently into the chocolate mixture. Pour over the caramel and nuts and let it harden in the fridge.
