Parsley and tomato salad

Hot, hot, hot ...... Can not remember that we've had such a long, warm and wonderful summer in Sweden sometime in the past. We are not so spoild with such warm weather here in Sweden....Baking becomes a little suffering right now though, as I do not really feel like spending toooooo much time in the kitchen. But the BBQ is on very often instead ..... and I just love grilled food, even if the accessory that goes along with it, is what I love most. The recipe I put out here is mostly for myself because I often forget to do it. It is a Lebanese-inspired salad that I think goes very well with grilled food, which is quick to make and is very, very good.

diced tomatoes
Lots of flat-leaf parsley
a spring onion
juice of one lemon
olive oil
Here's how: Chop and mix the tomatoes, parsley and onions after they been rinsed thoroughly. Pour the juice of the lemon and olive oil. Simple really good.
