Chocolate ice cream with caramel sauce

There have been some very hot days this week and we all love ice cream in my family. Making your own ice cream is easier than you think .... and probably no one around me was very surprised when I chose chocolate ice cream. To go with this ice creme. I made a caramel sauce and served in a red sugar dome. Inspiration for the dome, I got from one of Jan Hedh's many fine books.

Ice creme:
1.5 cups milk
1.2 cups of sugar
1 teaspoon vanilla
3 egg yolks
200g chocolate of your favorite brand (preferably without any filling )
2 cups cream
Here's how: Boil the milk , vanilla sugar and half the sugar in a saucepan on the stove. Let it soak the vanilla flavor for a few minutes. In a separate bowl , whip the egg yolks with the rest of the sugar. Add the hot milk and continue whisking . Pour the mixture back into the saucepan and heat gently , stirring constantly. Pull the pan aside until the mass begins to thicken and stir in the chocolate (which you hacked into small pieces ) . Stir until the chocolate has melted and let it cool over a water bath. Whip the cream a little soft and mix into the chocolate mass .

Caramel sauce:
2 cups cream
2 cups sugar
2 cups syrup
2 tsp vanilla
Here's how: Mix the cream, sugar and syrup in a saucepan. Bring to a boil and let
it simmer on low heat for about 5 minutes. Stir in the vanilla sugar and it is ready for serving.

Dome : Melt some sugar in a saucepan over not so intense heat . Do not burn it, as it tastes horrible. Add a few drops of food coloring and meander over a small round metal bowl that you turned upside down and smeared a little in advance.
Let cool and peel off gently afterward.
