I made a caramelsauceand servedin a redsugardome.Inspiration forthe dome, I got fromone of JanHedh'smany finebooks.
Ice creme: 1.5 cups milk 1.2 cups of sugar 1 teaspoon vanilla 3 egg yolks 200g chocolate of your favorite brand (preferably without any filling ) 2 cups cream Here's how: Boil the milk , vanilla sugar and half the sugar in a saucepan on the stove. Let it soak the vanilla flavor for a few minutes. In a separate bowl , whip the egg yolks with the rest of the sugar. Add the hot milk and continue whisking . Pour the mixture back into the saucepan and heat gently , stirring constantly. Pull the pan aside until the mass begins to thicken and stir in the chocolate (which you hacked into small pieces ) . Stir until the chocolate has melted and let it cool over a water bath. Whip the cream a little soft and mix into the chocolate mass .
Caramel sauce: 2 cups cream 2 cups sugar 2 cups syrup 2 tsp vanilla Here's how: Mix the cream, sugar and syrup in a saucepan. Bring to a boil and let it simmer on low heat for about 5 minutes. Stir in the vanilla sugar and it is ready for serving.
Dome : Melt some sugar in a saucepan over not so intense heat . Do not burn it, as it tastes horrible. Add a few drops of food coloring and meander over a small round metal bowl that you turned upside down and smeared a little in advance. Let cool and peel off gently afterward.
