This coconut chocolate cake has become a tradition to have for Christmas in my house. Made easy in the roasting pan, giving many pieces. Perfect to do in advance and keep in the freezer, to reduce the Christmas stress. ...

Chocolate base:
200 grams of melted butter
4 eggs
5 g sugar
2 tsp vanilla sugar,
2 pinches of salt
1 cup cocoa
3 cups flour

200 grams coconut flakes
1 cup light syrup
2 cups sugar
1.5 dl cream
75 grams of butter

Here's how: Preheat oven to 200 degrees C. Melt butter. Line a baking tray with baking paper (about 25x35 cm). Beat eggs and sugar, use the electric mixer. Mix in the flour, cocoa, salt, vanilla sugar and the melted butter and stir until smooth. Spread the cake into the baking tray with baking paper. Bake in the oven at 200 degrees C for about 15 minutes.
Meanwhile make the glaze in a saucepan. Pour the coconut flakes, syrup, sugar, cream and butter in a saucepan and place on the plate on medium heat. Stir until butter melts as it becomes smooth. Let then boil and simmer about 5 minutes.
When the cake is done and set aside from the oven, cover with the glaze direct and bake an additional 10 minutes in the oven until the cake is golden brown color. When the cake has cooled, cut it into the desired shape with a sharp knife.
