Crystallized lilac flowers

There are many different kinds of flowers which are edible and which can be crystallized for later use as decoration on cakes or pastries. Got a tip the other day about the lilac flowers beeing one of these, and since it is in full bloom right now, I just had to try it. The result is so incredibly cute..... although it was only fun to maybe do the first 20 pieces .... hahaha ..... a real test of patience, but still worth your while.

Pick the flowers you want crystallized. Whip up some egg whites with a few drops of water. Just do it gently with a fork. Brush the flowers with egg white (I dipped my in the egg white instead) and roll in sugar afterwards. It is important that the flowers will be fully covered to preserve the color, otherwise they will be brown. Let the flowers dry to the next day. They will then became hard and crystallized. Keep them in a jar.
