Custard/ Vanilla cream

Recipe for a real good and thick vanilla cream. Perfect as filling for cakes.

2 cups whipping cream
7 cups milk
1 vanilla pod
180 grams of sugar
60-80 grams of corn starch (depending on how thick you want it to be)
8 yolks
1 tablespoon vanilla sugar
Here's how: Split the vanilla pod lengthways and scrape the seeds in a saucepan. Add even down the rod itself. Pour the whipping cream, sugar and milk and boil gently. Stir together egg yolks and Maizena Starch and pour over the warm milk mixture in a thin stream while whisking constantly. Pick out the vanilla pod and put the pan back on the stove. Bring to a boil over low heat (strength 6 of 9 on mine). Whisk constantly until it has thickened. Important to have low heat and whipping. Good luck!
