Heart jellies

This weekend, I decided to bake something for coming Valentine's Day. Jelly hearts it's something I have never tried before and everything went fine until it was time to cut out the little heart molds ..... Today, the day after, I still have pain in my fingers :) .... Even if it was a little tricky at the end, the jellies were very much appreciated and everything is now forgotten.

3 cups water;
9 cups of sugar,
65 grams of gelatin powder,
30 grams of citric acid,
a few drops of lemon essence,
food coloring, fine grained sugar for garnish.

Here's how: Mix 1 1/2 cups water with the sugar in a saucepan. Bring to boil and let simmer until the sugar has dissolved. In another saucepan, blend the gelatin powder with remaining 1 1/2 cups water. Warm up, but be careful that it does not boil. Stir in the gelatin until the powder is dissolved. Pour it into the pan with the sugar water. Add citric acid, lemon essence and eventually even few drops of food coloring. Pour the paste into a baking tray with parchment paper and let it rest in a cool room until it stiffens. Once the paste has set, it is clear to start cutting into the desired shape. I used small and large molds. A little slow at first, but learned the technique at the end. Roll the jellies in the fine-grained sugar.
