Ladyfingers

You can always have Ladyfingers at home in a box ready to be served with a cup of milk chocolate, or why not decorate a cake with. Children tend to like them very much and they have a habit of disappearing very quickly. If you want to make a Tiramisu dessert you will also need to have ladyfingers ready.

3 eggs (room temperate),
0.8 cups sugar,
1 teaspoon vanilla;
1/8 teaspoon salt,
3 cups flour;
1 tablespoon cornstarch,
powdering sugar to sprinkle over.

Here's how: Preheat the oven to 200 degrees. Separate egg whites from yolks. Beat egg whites until stiff foam and mix in half of the sugar (0,4 cup) little by little towards the end. Continue whisking until you get a nice, glossy meringue. In a separate bowl, mix flour, cornstarch and salt. In a third bowl, whisk the egg yolks with the remaining sugar and the vanilla sugar for about 3 minutes. Add the meringue into the egg yolk batter and mix very gently between each time. Strain the flour mixture over the meringue and stir gently. Pipe out about 8 cm long strips on parchment paper and sift powdering sugar before baking them for about 10 minutes at 2oo degrees heat.
