Almond fingers

A Norwegian recipe that remind me of the look on our "vacuum cleaners" (which is a Scandinavian pastry, best to add :) ) ..... except for the green color of course ..... and my son's favorite right now, but next week I'm sure will be something else....:) ....

250 grams almond flour,
250 grams powdered sugar,
2 egg whites,
100 grams chocolate,
2 tablespoons coffee

Here's how: Mix almond flor with powdered sugar. Stir in egg whites, preferably by hand (not electric mixer). When the paste is smooth, roll out finger thick rods. Cut it into smaller pieces, about 5cm long and bake on parchment paper, in oven for 6-7 minutes at 200 degrees. Allow to cool completely.
Melt the chocolate in the coffee over low heat and dip the almond fingers in it. If desired, these can also be rolled in chopped nuts as well.
