Mini pies

Buffet food is something I gladly arrange and these mini pies are always a must have there. So it has been for many, many years now. I'm sure many in my family and among my friends, would look very surprised if these were missing on the table. Very appreciated, very good and the filling can be varied as much as you want.......

The shell:
2 1/2 cups flour
75 grams butter
3/4 cup Low-fat cottage cheese
Filling:
100 grams smoked pork
200 grams mushrooms
3 eggs
2 cups whipping cream,
1 cup milk
1/2 teaspoon salt
1 pinch of black paper
2 cups grated cheese
Here’s how: Blend together the flour and butter to a breadcrumb consistency. Add the low-fat cottage cheese and knead the dough. Press the dough into small pie molds (or muffin cups, about 16 pcs). Set the molds in the refrigerator and let rest about 30 minutes. Preheat the oven to 225 degrees. Chop the smoked pork and fry the mushrooms in little oil. Whisk together eggs, cream, milk, salt, paper and cheese. Have about one table spoon of the smoked pork and mushrooms in every shell. Pour over the egg mixture. Bake in center of oven for about 15 minutes. Serve the pies warm.
