Yesterday was Valentine's Day and I wanted to bake something in secret in order to surprise the kids in the morning. Proved to be Not quite easily, as the kids have a special ability to always know when something is going on ....... but when night came and they went to sleep, I had my opportunity. I baked cupcakes in the shape of cakes bunk, dressed in chocolate and decorated with small sugar flowers and butterflies. Became very appreciated in the morning. And best of all ..... they got to eat it in bed .....

Cupcakes:
4 eggs ,
2.5 cups flour
1 cup flour wheat starch
2.3 cups fine-grain sugar
10 grams of dry yeast
110 grams butter,
1 teaspoon vanilla .

Chocolate ganache :
300 grams of chocolate ,
1.5 cups whipping cream

Here's how: Beat eggs, sugar and vanilla sugar in a bowl. Add the unsalted butter. In a separate bowl, blend flour, starch and yeast. Pour it into the egg mixture and mix gently. Fill the silicone mold to 3/4 parts and bake for 20 minutes at 180 degree heat. Let cool completely in the mold before you dip them in chocolate. Make chocolate ganachen meanwhile by heating the chocolate and cream until everything is melted together.
Remove the cupcakes from molds and put those on a wire rack. Pour over chocolate ganache when it has cooled down a bit and let the excess chocolate to drain. Let rest in the fridge for a while before you garnish with sugar flowers, sprinkles or else.... I have used flowers and butterflies which i make of sugar paste. Good luck!
The recipe here is for 6pcs of cupcakes and silicone mold are available at hobby shops.
