Lemon curd

We had Midsummer celebration yesterday in Sweden and according to tradition, we have to bake an strawberry cake. The cake I've made is filled with lemon curd, on a base of almond paste and topped with strawberries. Very good and very easy ...... and simple things were needed, when there was so much else to get done as well. Sometimes it feels like it is missing a few hours a day. Anyway, lemon curden is first out. I made a big batch this time, and perhaps only a quarter goes to the cake. The rest I thought to give away as gifts. Tends to be appreciated. 

The recipe below is for a larger batch, about  4-5 jars as in the image.
juice and grated rind of 5 lemons
4.5 cups of sugar
20 yolks
300 grams of butter
Here's how: Have all ingredients in a saucepan. Place it over another larger saucepan over the stove, filled with boiling water. Stir in everything until it has thickened and got the right consistency. Pour into glass jars and let cool. Store in the refrigerator.
