Lemon mousse filled eggs

Its probably a bit childish of me that still likes Kinder eggs but it is milk chocolate ..... and nowdays, researchers say that chocolate is good for the brain. However, we all know how it is with the matter; what is good for us today, is certainly not as good tomorrow.  Anyway, for this Easter dinner I've made some quite festive filled Kinder eggs, which are fun to serve as a dessert. The filling can vary according to taste and liking. I started with some that are filled with lemon mousse ... amazing fresh and good taste.

4 Kinder eggs
2 egg whites
2 tablespoones sugar
3 tablespoones lemon curd
1/2 cup heavy cream
grated lemon peel mixed with a little sugar (for garnish)
Here's how:  Gently make holes in each chocolate egg, just big enough so you can take out the toy on the inside. Put them to the side.
Beat the egg whites and sugar until stiff foam. Add the lemon curd and gently mix it with egg white (do not whisk). In a separate bowl, whip the cream and add it afterwards in the egg white mixture. Mix well and then fill the eggs. Set it in the fridge for at least a couple of hours before serving. Garnish with lemon peel mixed with sugar so it looks like the yolk.
