Lilac sugar

Spring is a wonderful time of the year in Sweden. I just love how all the plants and flowers come to life again and I try to spend as much time as I can in my garden. When the tulips have bloomed over and magnolian is struggling to get their last magnificent buds, is the lilac turn to take over the garden. This is one of the few flowers that remind me so much of my childhood and was among the first things I planted when we bought our house. Passing by a lilac bush and feel its sweet fragrance, is like traveling back in time to the time I was 5, and went hand in hand with grandma.
Lilac sugar, however, is something new for me. Have never done it before, but liked the idea very much. The rummer has it, it is very good to use when baking and I will definitely try to use it.

Pick some lilac flowers and let them lie on a newspaper for a few minutes so that any insects emerge from the flowers. Pick the small flowers and layer them togheter with sugar, in a jar or bag. Shake a little. The sugar makes the flowers will be preserved and keeps them nice.
