I mademy own versionoffluff topsby havingtheseheart-shapedinstead ofround andalsoadded color to thefoaminside. The recipe isthe same asthe classic one, just the design is a littlebit different.
Base: one pack of waffels , about 35 pieces Filling: 9 gelatin blades, 4 1/2 cup sugar 1 cup powdered sugar 1 teaspoon vanilla 1 egg white, 1 1/ 2 cups water 1 more cup water
a few dropps of food coloring
Glaze: 400 grams dark chocolate, 2 tablespoons canola oil
Here's how: Press out heart-shaped waffels . Soak the gelatin blades in a bowl of cold water for 5 minutes . Mix sugar , powdered sugar , vanilla sugar , egg white and 1 1/ 2 cups water in a large bowl. Pick up the gelatin blades and melt them over low heat in a saucepan with 1 cup water. Be sure that they are properly melted. Carefully pour the gelatin into the mixture while whisking . Beat with kitchen assistant in 30 minutes to a puffy and firm paste. For me, who had only a hand mixer, took about 50 minutes at the highest speed. Add the food coloring and beat for one more minute. Pour the batter into a piping bag and pipe on the waffels all the way to the edges. Set in the fridge or freezer to harden. Prepare the glaze by melting the chocolate over a water bath. Stir in oil and dip the fluff tops in chocolate. You can also sprinkle coconut on them if you like. Store in fridge or freezer.
