Midsummer cake 2014

I hope you all have had a wonderful Midsummer celebration. Lots to do yesterday and did not had the time to give you the recipe for strawberry cake I've made, as promised. That  beeing said, here comes a very simple cake to make and delicious. It is the second year in a row that I bake it at Midsummer. Have a nice weekend!

300 grams almond paste
1 egg
2 egg whites
1 1/2 cup lemon curd
1 liter of strawberries
Here's how: Preheat the oven to 175 degrees F. Grate the almond paste and stir in egg and egg whites. Pour batter into a greased baking tin, about 23 cm in diameter. Bake in the lower part of the owen for about 20 minutes. Allow to cool. Spred on lemon curd on the cake base. Shortly former serving, halve the strawberries and spred on top of the cake. You can serve vanilla ice cream or cream to this cake.
