Norwegian "lappar"

For today's lunch, I made some Norwegian "lappar". These are very similar to our normal platelets and are highly appreciated by children. A good option when you are tired of pancakes. I like to have syrup to these, but other toppings are just as good. Honey is good and chocolate may not be the healthiest, but most appreciated here at home.

2 eggs
3/4 cup sugar
1 teaspoon vanilla
3 cups buttermilk
4 cups flour
1 tsp bicarbonate of soda
Here's how: Beat eggs with sugar for a few minutes. Add the flour mixed with baking soda, buttermilk and vanilla. Mix well. Heat a frying pan with little butter. When the pan is hot, pour in the batter with a little bigger spoon and steak them at not too high heat to allow them  to be cooked through. Serve immediately with syrap, honey, chocolate or other goodies.
