Princess cupcakes

What do you think the odds are that a little girl will choose pink / princess theme for her 5 year birthday party ? Not surprisingly , right? My daughter had a very long list of what mom should bake for the party and the imagination has never flourished so much as when she was telling her grand plans on what the cake should contain . After taking away some of the ideeas that may not have been fully thought through....but yet very fun , we decided that a cake of strawberries , chocolate, cupcakes and marshmallows  would be a good mix. Obviously everything would go in pink tones and simultaneously was all kindergarten guys banned from the party. As you understand , this was a little extra fun to do and her joy when she saw that things began to take shape was just wonderful to see .
We've made the Princess cupcakes of a simple cupcake batter, pink chocolate frosting and best of all , I found these cute princesses in Wilton's catalog that made all little girls around the table to pull a small sweet wow ...... Very nice decoration that goes really well to reuse .

Cupcakes:
5 cup whipping cream
200 grams of butter (softened)
3 cups sugar
4 eggs ( room temperated )
7 cups flour
2 teaspoons baking powder
1 teaspoon vanilla extract
Here's how: It is important that butter and eggs are not straight from the fridge for best results. Beat the soft butter with the sugar into a fluffy buttercream . Add one egg at a time and continue whisking for a while until you get a nice fluffy cream. Add flour and baking soda that you have sighted three time for best result. Add whipping cream and vanilla extract and mix well with a spatula. Fill muffin moulds to more than half and bake for about 25 minutes at 200 degrees C. Allow to cool completely before tubing on the frosting .


Frosting :
3 cups whipping cream
300 grams of white chocolate - I always use a finer chocolate here , like from Lindt , or red Candy Melts
1 tablespoon vanilla extract
a few drops of food coloring
Here's how: Heat the cream in a saucepan , but be careful that it does not boil . Pour the hot cream over the chocolate and stir until all is melted and blended nicely together . Place the mixture in the refrigerator for at least 6 hours or overnight. Picking up late and beat up . It goes pretty fast to get a smooth and nice frosting . Pipe the frosting on the cupcakes and decorate as desired and taste.
