Rose apple pies

I have seen these rose apple pies for quite some time around on different sites .... and wanted to try baking them myself. They look really cute  and the idea of rolling up apples into roses is absolutely amazing. There is a fairly large amount of recipes to choose from and I got stuck for one of them with  mascarpone cream. Did not become a hit, I must admit, and next time I'll choose something else with vanilla cream probably, but this is how they became this time anyway. Have a nice evening everyone!

Recipes for 24 pieces.
Pie crusts:
250 grams of flour
75 grams of sugar
5 tablespoons lemon juice
125 grams of butter
1 egg
Apple roses:
10 red apples
juice of half a lemon
500 grams of apple juice
250 grams of sugar

Filling:
75 grams of sugar
1 egg
2 egg yolks
1/2 lemon
125 grams mascarpone cheese
2 tablespoons cornstarch

Here's how: Start with pastry shells. Mix flour, sugar and lemon juice in a bowl. Add the butter into small pieces and crumble it all together with your fingertips. Beat the egg and pour over the flour mixture. Knead into a dough, either manually or by means of dough mixers. Let rest in the refrigerator for about 30 minutes, wrapped in plastic foil. In the meantime, will prepare the apple roses as follows: Share apples into halves and cut out the stem. Cut each apple half into thin slices of about 3mm. Add the slices directly into a bowl of water and lemon juice (then they will not turn brown). Have apple juice and sugar in a saucepan and bring to a boil. Turn down the heat a little, take a few apple slices at a time and have them in the warm juice. Let simmer for a few minutes so that they become soft enough to roll up later. Do not boil too long as they crumble. Remove the slices and arrange them in an overlapping design on parchement papper (see picture). It takes about 8 slices for each rose. Roll into roses and begin making the filling by mixing all the ingredients for it (without whisk too long).
Take out the dough from the refrigerator, divide it into 24 equal parts. Roll each part and dress muffin cups with it. Fill in some marcarpone cream in each form and press a apple rose on top.  Bake in the lower part of the oven at 200 degrees C for about 25 minutes. Dust with icing sugar before serving.
