Shrimp cheesecake

I love seafood and take every opportunity I can get to test new recipes for it. This amazing shrimp cheesecake recipe I found on another blog of a talented girl.....madame-edith.blogspot.se. Very good!


Base:
75 grams of butter
7 slices dark bread
Filling:
5 sheets of gelatine
3 cups creme fraiche
400g cream cheese, such as Philadelphia cheese
1 kg prawns in shell
1 small red onion
1 can of spawn of fish (about 80 grams)
0.5 cups chopped dill
1 tablespoon lemon juice
salt / pepper
Here's how: Start with the base by melting the butter, mix the bread and mix together to form a pasty mass. Press the mix into a form with removable edge of about 25 cm in diameter. Set in the fridge. Have the gelatine sheets in cold water for about 10 minutes. Mix together creme fraiche and cream cheese. Peel the prawns and chop half of them in small pieces. The rest of the prawns are to be used for garnish. Peel and finely chop the onions. Stir in the chopped shrimps, red onion, spawn of fish, dill and lemon juice into cream cheese mix. Season with salt and pepper. Squeeze out the water from the gelatine sheets and melt them in a saucepan over low heat. Pull the pan from the heat. Mix the gelatin with little cream mixture (which reduces the risk of any gelatin lumps in the filling). Mix in the rest of the filling and stir well. Spread the filling over the base. Allow to set in the refrigerator at least 5 hours (preferably overnight). Decorating with the rest of the shrimp just before serving.
