Base: 75grams of butter 7slicesdark bread Filling: 5sheets of gelatine 3 cupscremefraiche 400gcream cheese, such as Philadelphiacheese 1 kgprawnsin shell 1 smallred onion 1 can of spawn of fish (about 80grams) 0.5 cupschopped dill 1 tablespoonlemon juice salt /pepper Here's how:Start withthe baseby meltingthe butter, mix the breadand mixtogether to form apasty mass. Pressthe mix intoa form with removableedgeof about 25cm in diameter.Setin the fridge.Havethe gelatine sheetsincoldwater for about 10minutes.Mix together creme fraiche and cream cheese. Peel the prawnsand chophalf ofthem in small pieces.The rest ofthe prawnsare to be usedfor garnish. Peel andfinely chopthe onions. Stir in thechopped shrimps, red onion, spawn of fish, dill andlemon juiceintocream cheese mix. Season with saltand pepper.Squeeze outthe waterfrom the gelatine sheets and meltthem in a saucepanover low heat. Pullthe pan fromthe heat.Mix thegelatinwithlittle creammixture (which reduces the risk ofanygelatinlumps inthe filling). Mix inthe rest ofthe filling andstir well. Spread thefilling over thebase. Allow to setin the refrigeratorat least 5hours(preferably overnight). Decorating withthe rest ofthe shrimpjust beforeserving.
