Snickers cheesecake

Have celebrated my birthday with family and friends this weekend and baked a delicious Snickers cheesecake. This one I can highly recommend .... easy to do, can be prepared the day before serving .... which gives you more time to do some other things more fun, before the guests arrives. A good dessert that can be made without nuts if you are allergic, as I did: the square cake is as recipe below shows, and the round one is same recipe, but without  Snickers chocolate and nuts. Just as good.

Base:
200 grams digestive
100 grams of butter
1/2 cup sugar
1 1/2 tbsp cocoa
1/2 teaspoon salt
Here's how: Run the biscuit in a food processor to crumbs. Melt the butter and mix everything together. Press the batter on the bottom of a mold of 23 cm (round or square). I do not usually line the mold with high sides because I want to see all the layers in the cake when it is finished. Bake the base at 180 degrees C for 7 minutes and let cool afterwards.

Cheesecake Filling:
600 grams cream cheese
2 cups sugar
2 tablespoons flour
1 tbsp vanilla sugar
1/2 cup cream
2 egg yolks
2 eggs
about 120 grams Snickers bars
1/2 cup peanuts

Here's how: Preheat the oven to 200 degrees C. Beat cream cheese, sugar, vanilla sugar and flour until it feels slightly fluffy. Whisk in the cream. Gently mix in the egg yolks and then, one egg at a time. Use a spatula to this. Add Snickers pieces on the bottom of the cake, sprinkle with peanuts and pour in the filling. Bake for 10 minutes at 200 degrees, then lower the heat to 105 degrees without opening the oven door. Continue baking for 35 minutes. Turn off the oven and let chessecaken to cool in the oven for 30 minutes before opening the door. This will reduce the risk of cracking. Remove, let cool and store in the fridge until the following day. The final layer of frosting is to be put on serving day.

Frosting:
300 grams cream cheese
2 tbsp cocoa
2 cups powdered sugar
1 teaspoon vanilla
0.5 dl cream
Here's how: Whisk all ingredients except the cream until it feels easy and fluffy. Add little by little the cream and beat until you have a smooth frosting. Pipe the frosting on chessecaken and decorate according to your taste.
