Sofia and Joel's wedding cake
My neighbors Sofia and Joel married yesterday and I had the great honor to bake their cake. My first wedding cake, so ...... I was a little nervous. It was not the right place for any failure, so I baked the cake from recipes I knew well. The couple's wish was a chocolate cake filled with flavors of vanilla and strawberry. The rest I got to do as i pleased, which I appreciate very much. That makes it all the more fun, get a little creative and maybe even change the design along the way. And that is exactly what happened, because I got to bake the cake on the hottest day this year, with over 30 degrees ... both indoors and outdoors ..... and then work with buttercream and sugar paste turned out to be a pretty nice challenge. Let's say I got to do pretty much right on the spot in the refrigerator. It would actually have been an additional floor on the cake, but I simply skiped it ....... it just melted and tipped sideways.
... anyhow ..... at the end; I managed to deliver a nice wedding cake. Chocolate bottoms, filled with vanilla ice cream mixed with a little whipped cream and chopped strawberries and caramel. Covered with butter cream, dressed with sugar paste, decorated with edible lace and white roses and peonies.

... and in case the cake would not be enough for all guests, I made a plate of cupcakes too.
Recipe for 24 pieces cupcakes filled with vanilla cream and spun with white chocolate frosting. Sugar flowers are made of sugar paste.
5 cup custard
200 grams (important to be at room temperature)
3 cup sugar
4 eggs (important to be at room temperature)
7 cups flour
2 teaspoons baking powder
2 tbsp corn flour
1 teaspoon vanilla extract
Here's how: Preheat oven to 200 degrees C. Pour the vanilla sauce in a saucepan and bring to a boil over thoroughly stirring. Remove from heat and let cool for at least 30 minutes. Beat the soft butter and sugar to a fluffy butter cream. Add one egg at a time and whisk to a fluffy consistency. I usually whip quite some time here. Then add the flour, baking powder, majzena (sieved at least 3 times before), custard and vanilla extract. Mix everything well with a spatula. Fill muffin cups 3/4 full sections with batter and bake for about 20 minutes.
