Strawberry pie

Enjoyieng the last days of holidays now. Monday we start work again, but nothing to complain about. We have had a fantastic summer this year and the nice weather seems to want to hold on a while longer. Wonderful. We are celebrating with a summery strawberry pie. Keep it nice!

Shell:
125 grams of margarine
1 pinch of salt
1/2 cup sugar
3 1/2 cups flour
1 cup low-fat Kesella
Lemon Cream: download the recipe here.
Filling: 1 1/2 liters of strawberries
Glaze: 1 1/2 cups strong strawberry juice, 1 tablespoon cornstarch
Here's how: Chop together the margarine, salt, sugar and flour to a crumbly mass in a bowl and add kesella. Blen untill you have a nice dough. Roll it out with a little flour on a floured board and press it out into a baking form of about 20-24 cm in diameter. Prick with a fork in a few places. Bake the dough in the center of the oven for about 25 minutes at 200 degrees C. Let cool. Prepare the lemon cream and spread it into the pie shell. Clear the strawberries and top the pie with them. Boil strawberry juice, whisk maizenan and simmer for half a minute. Pull the pan from the heat and let cool. Spoon the glaze over the strawberries and allow to solidify. Set in a cool place until serving.
