Valentine macaroons without almond

There are many people who have different degrees of nuts allergies, and you never want to take any risk of someone being ill of your baking. Thant's why I have now learned how to bake macarons on pumpkin seeds instead of the usual almond flour. The taste was almost not affected at all, and you only feel the pumpkin flavour if you know about it. I've baked them in pink and celebrated Valentine's Day!

Recipe for about 25 macarons
100 grams of pumpkin seeds
4 egg whites
5 tablespoons granulated sugar
200g icing sugar
pink paste color
Lemon cream:
100g soft butter
2 cups powdered sugar
1 egg yolk
lemon juice
pink paste color
Here´s how: Mix pumpkin seeds and strain out large pieces. Beat the egg whites to stiff peaks, add a little powdered sugar along the way. Mix pumpkin seeds and icing sugar in another bowl and carefully turn it into foam (do not whisk). Add color and pipe the macarons on silicone mats. Bake in the bottom of the oven at 150 degrees C for about 15 minutes. Let cool completely before filling with the lemon cream (which is made by mixing all the ingredients until smooth).
