Valentine's Day chocolate biscuits

Today I just want to wish you all a very nice Valentine's Day! ..and show a recipe for everyone's favorite here at home: chocolate biscuits. Many hugs from me and take good care of each other.

Recipes for about 30st.
Biscuits:
900 grams of almond paste,
3 egg whites
Filling:
300 grams of butter,
4 1/2 cups powdered sugar,
3 egg yolks,
6 tsp vanilla sugar,
9 tsp cocoa
Glaze:

400 grams of dark chocolate
Here's how:
The biscuits - Grate the almond paste. Mix it with the egg whites into a smooth batter. Click it out on a baking sheet dressed with parchment paper (one tablespoon roughly) Flatten them a bit with floured hands so that they will be about 5cm in diameter. Bake in center of oven for 10-12 minutes at 200 degrees C. Loosen the cookies carefully and let them cool on a rack.
The filling: Stir together unsalted butter, icing sugar, egg yolks, vanilla sugar and cocoa into a smooth cream. Spread a little filling on each biscuit. Let them stand in the freezer for at least an hour.
Glaze: Melt the chocolate and dip the biscuits quickly so that the filling is completely covered. Turn the biscuits a bit so that the excess chocolate to drain away. Place the biscuits cold.
