Vanilla Cake with cane sugar syrup frosting
Today is my colleague Annika's birthday and we surprised her with a small cake made of vanilla layers, filled with a frosting of Philadelphia cheese and sugar cane syrup. Inspiration and recipes for the frosting, I have found on SOCKERRUS.SE The pictures became a disaster, but nothing to do about that now. Hope it tasted good anyway, even though I myself am not so fond of cakes. Congratulations Annika! ... And many hugs.
The cake is baked in two baking pans of only 15 cm in diameter, but because it is so high, it is enough for at least 10 people.
Base (2 bases gives 4 layers):
2 teaspoons baking powder
red paste color
200 grams unsalted butter
3.5 cups powdered sugar
400 grams of cream cheese
50 grams sour cream
1 tsp vanilla essence
2 tablespoons syrup
Here's how: Start by dressing two molds of 15 cm in diameter with baking paper. Let the paper stick up well above the edges because the bases will get very high. Measured up the 6 eggs in a glass. Take an equally large glass and fill with as much sugar. Whisk eggs and sugar for at least 15 minutes. Measured up a third identical glass halfway with flour and half potato flour. It should togheter be to the same amount as sugar. Mix it into the egg mixture together with the baking powder and paste color. Mix gently but not for long. Spread the batter into the two molds and bake at 175 degrees C for about 40 minutes. Meanwhile make the frosting by whisking the butter fluffy. Add the powdered sugar and beat on high speed for about 10 minutes. Add the cream cheese and beat on low speed until mixed. Add the sour cream, vanilla and syrup. Mix well and use to fill and cover the cake as desired. Apple on top of the cake is dipped in toffee made of 1 dl sugar, 0.7 cups syrup, 3 tablespoons warm water and a little red paste color that together cooked up to 155 degrees C.
